Great chefs
The fame of some important restaurants in Rome is closely bound to the name of the managing chef.

For example, "La Pergola" (Cavalieri Hilton) is home to the chef that won the three fork prize this year - Heinz Beck. Beck came to Italy to 1992 with a brilliant career already under his belt and obtained success in Rome very quickly too. He won the Gold Medal in 2000 at the Foyer of Artists, the first time this prize was given to a chef. In 2003, he won the "Cuocoric" prize as best chef and in 2004, the “Ampolla d'Oro” prize from Enoteca Italiana.

His Mediterranean cuisine is very attentive to detail and the quality of products; their freshness and seasonality is key. Beck switches between modern technique, incorporating the use of technology, and the traditional use of simple ingredients, light cooking, and fresh handmade pasta.

Nazzareno Menghini, however, can be found in the restaurant of the "Hotel de Russie." His cuisine is very rich and aromatic. Inspired by the Mediterranean, he specialises in fish. Dishes seem to be simple, but instead are extremely refined with a multitude of flavours. The tastes and smells of his ingredients are always identifiable yet contained, even in the most rich and elaborate dishes. He wrote the book "Capri - Nella cucina del Quisisana."

The Palazzo delle Esposizioni's Open Restaurant has recently changed management to the most beloved chef in Lazio, Antonello Colonna. This great chef has brought the cuisine from his restaurant in the province of Rome (Labico) to the centre of the capital and offers the traditional flavours of the Roman countryside. He has also presided over many important events. In 1998, he appeared on several Beretta salami advertisements and in autumn 1999, he was contacted by CREMONINI S.P.A. to manage the "Gourmet" restaurant wagon on ETR 500 trains. Since 1999, he has been teaching restaurant management at the LUISS MANAGEMENT University of Rome.

On 29 January 2000, he was the MC at the gala dinner for the inauguration of the new Termini Station promoted by Italian Railways and Grandi Stazioni, which presided over the stations restructuring for the 2000 Jubilee. On 28 May 2005 at the Auditorium di Roma, he held a dinner for the inauguration of the Thai Festival, whose profits went to people affected by the Tsunami. Additionally, on 12 June 2006, he took part in the charity dinner organised by Tutto Italia at Rockefeller Centre in New York.
